Pre-Shift Briefing
Everyone on the floor should leave the briefing knowing the same five things: who is coming, what is different tonight, what is unavailable, who has an allergy, and what we are focusing on.
Guest privacy comes first. A briefing sheet often holds the most sensitive things a restaurant knows about its guests: who they are, what they are celebrating, and their health. Treat it that way.
- Tables, not names. Write "T12 · returning guest · anniversary" rather than a full name. Never add phone numbers, email or room numbers, or card details.
- Allergies are health information. Link them to a table and seat, such as "T7 · seat 2 · sesame, severe", and share them only with the team serving that table and the kitchen.
- Only what the shift needs. Leave out anything personal that does not change how you serve the guest tonight.
- On a shared device, close the page or press Clear when the briefing is over.
- Printed copies stay back of house. Keep them out of guest view, never on the pass or the host stand, and shred them at the end of service.
Nothing you type is saved or sent anywhere, not even on this device: close or refresh the page and the sheet is gone. Always follow your venue's data policy and local data-protection law; in the UAE, that is the Personal Data Protection Law.
